- 200 g dark chocolate
- 200 ml liquid cream
- 150 g butter (at room temperature)
- 1 ½ cups powdered sugar

Preparation
1. Preparing the Cake
- Preheat the oven to 175°C (350°F). Grease and flour two 20–22 cm springform pans thoroughly, making sure to coat the sides evenly to prevent sticking. Lining the bottoms with parchment paper can help ensure a clean release.
- In a large bowl, mix the flour, granulated sugar, sifted cocoa powder, baking powder, baking soda, and salt. Whisk well so the dry ingredients are evenly distributed and no cocoa lumps remain. Proper mixing at this stage promotes an even rise and uniform texture.
- Add the eggs, milk, vegetable oil, and vanilla extract. Beat until smooth and fully combined. The batter should begin to look glossy and cohesive, with no streaks of dry flour.
- Finally, carefully add the hot water (or hot coffee). The batter will become quite runny — this is expected. The hot liquid helps bloom the cocoa powder, intensifying the chocolate flavor and creating a moist crumb.
- Divide the batter evenly between the prepared pans. Use a kitchen scale if available for perfectly even layers, which will make assembly easier and more stable.
- Bake for 30–35 minutes. The cakes are ready when a toothpick inserted into the center comes out clean or with a few moist crumbs. The tops should spring back lightly when touched.
- Remove from the oven and allow the cakes to cool in the pans for several minutes before transferring them to a wire rack. Let them cool completely before assembling to prevent the cream from melting.
2. Chocolate Cream (Ganache Buttercream)
- Heat the liquid cream in a saucepan over medium heat. Remove it from the heat just before it begins to boil — small bubbles may form around the edges, but it should not reach a rolling boil.
- Add the dark chocolate to the hot cream and let it sit undisturbed for about 2 minutes. This resting time allows the chocolate to soften evenly.
- Stir gently from the center outward until the mixture becomes smooth, glossy, and fully melted. Allow the ganache to cool to room temperature so it thickens slightly.
- Once cooled, add the room temperature butter and powdered sugar. Beat until fluffy and creamy. The texture should be light, spreadable, and smooth, holding its shape without being stiff.
3. Assembling the Cake
- Place the first cake layer on a serving plate or cake stand. If necessary, level the top for a stable base.
- Spread a generous layer of chocolate cream evenly over the surface. Sprinkle M&M’s across the cream, pressing them in lightly so they stay in place.
- Carefully position the second cake layer on top, aligning it evenly. Press down gently to secure the layers.
- Cover the entire cake — top and sides — with the remaining chocolate cream. Smooth the surface using a spatula for a clean finish or create soft swirls for texture.
4. Decorating
- Place plenty of M&M’s on the sides and top of the cake, pressing them gently into the cream so they adhere well. For a festive look, allow some candies to cascade slightly down the sides.
