Elegant Wedding Dress Fondant Cake Recipe (Version 2)

 

Ingredients:

For the Vanilla Sponge Cake:

 

2 ¼ cups cake flour

 

1 tbsp cornstarch

 

2 tsp baking powder

 

½ tsp salt

 

1 cup unsalted butter, softened

 

2 cups granulated sugar

 

5 egg whites

 

2 tsp vanilla bean paste (or extract)

 

1 cup buttermilk

 

For the Swiss Meringue Buttercream:

 

5 egg whites

 

1 ½ cups sugar

 

1 ½ cups unsalted butter, softened

 

1 tsp vanilla extract

 

Pinch of salt

 

 

  Instructions:

 

1. Preheat oven to 340°F (170°C). Prepare cake pans (suggested: one round and one dome-shaped pan).

 

2. Sift dry ingredients: flour, cornstarch, baking powder, salt.

 

3. Cream butter and sugar until light. Add egg whites one at a time, mixing well.

 

4. Add vanilla, then alternate adding dry ingredients and buttermilk.

 

5. Bake for 30–35 mins or until a toothpick comes out clean. Let cool completely.

 

 

Swiss Meringue Buttercream:

 

1. In a heatproof bowl, whisk egg whites and sugar over a double boiler until sugar dissolves.

 

2. Transfer to mixer, whip until stiff peaks form and mixture cools.

 

3. Gradually add butter, then vanilla and a pinch of salt. Beat until silky smooth.

 

 

Assembly & Decoration:

 

1. Trim cakes and shape into a wedding dress silhouette — use the round base for the “skirt”, and dome or small cylinder for the “bodice”.

 

2. Cover entire cake in a smooth layer of buttercream.

 

3. Roll and drape white fondant to mimic soft fabric folds of a wedding dress.

 

4. Add fondant bows, flowers, or silver beads to decorate the bodice and hem.

 

5. Use embossing tools for lace effects, and edible glitter for a shimmering finish.

 

 

Golden Vanilla Butter Cake (Perfect for Crown Cake)

 

Ingredients:

 

250g unsalted butter (softened)

 

250g caster sugar

 

5 large eggs

 

300g all-purpose flour

 

2 tsp baking powder

 

1/4 tsp salt

 

1 tsp vanilla extract

 

60ml milk

 

Optional: zest of 1 lemon for extra flavor

 

 

Instructions:

 

1. Preheat the oven to 170°C (340°F). Grease and line a round deep cake tin (or multiple tins if stacking layers).

 

2. Cream the butter and sugar in a large bowl until light and fluffy.

 

3. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract (and lemon zest if using).

 

4. Sift the flour, baking powder, and salt, then gradually fold into the wet mixture.

 

5. Add the milk and mix until smooth and thick.

 

6. Pour into the prepared tin and level the surface.

 

7. Bake for 50–60 minutes or until a skewer inserted in the center comes out clean.

 

8. Cool completely before shaping or decorating.
