Soft, sweet, and lightly spiced — these muffins are the perfect way to use up your zucchini!
Ingredients:
- 1 ½ cups grated zucchini (don’t peel)
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 1 ½ tsp cinnamon
- ½ cup brown sugar
- ½ cup white sugar
- 2 large eggs
- ½ cup vegetable oil (or melted butter)
- 1 tsp vanilla extract
- Optional: ½ cup chopped walnuts or chocolate chips
Instructions:
- Preheat oven to 180°C / 350°F and line a muffin tin.
- In one bowl, mix dry ingredients — flour, baking soda, baking powder, salt, and cinnamon.
- In another bowl, whisk eggs, sugars, oil, and vanilla until smooth.
- Stir in grated zucchini.
- Gently fold in the dry ingredients (and nuts or chocolate chips, if using).
- Fill muffin cups ¾ full and bake 18–22 minutes, until golden and springy on top.
- Cool slightly… then try not to eat them all at once
